Healthy Apricot Parfait

This is the perfect recipe to make use of apricot seconds! They become so sweet and juicy when baked and are great accompaniments to fresh yoghurt. A great option if you are looking for a breakfast recipe that you can prepare the night before. This recipe could be used as a healthy dessert, snack or breakfast.

Ingredients

-10 small apricots

-2 tsp maple syrup

-1/2 tsp of cinnamon

-1 cup of yoghurt

-1-2 scoops of Inline Vanilla or unflavoured protein powder

 

Steps

-Cut apricots in half and remove the stones, preheat oven to 180-degree fan bake

-Place apricots in roasting dish, drizzle over maple syrup and dust with cinnamon

- Bake for 15 minutes or until they are as soft as you like them

-Allow apricots to cool while mixing yoghurt with Inline protein powder

-Fill jars or glasses with bakes apricots and top with yoghurt mixture

-Finish with a drizzle of maple syrup, coconut, cocoa nibs and buckwheat groats
