Peanut Butter chocolate truffles

Peanut Butter chocolate truffles

There is nothing quite like the combination of chocolate and peanut butter. Mixing salty and sweet always has a dangerously moorish effect that will leave you craving more of these delicious morsels.

These would make for the perfect wee treat to take along to your next Christmas party or to have on hand for when friends are visiting. Made even more impressive by the fact that they are refined sugar free, made with whole foods and are super easy to whip up!

-3/4 cup of peanut butter

-1/2 cup rice malt syrup

-1 cup desiccated coconut

-1 scoop of Inline unflavoured whey protein

-2 tsp. maple syrup

Chocolate coating:

-1/2 cup of coconut oil

-1/3 cocoa powder

-1/2 cup maple syrup

-1 tsp. vanilla essence

  • Blend peanut butter, rice syrup, desiccated coconut, protein powder and maple syrup together in a food processor
  • Set aside to chill and firm up in the fridge for around 30 minutes
  • For the chocolate coating melt the coconut oil and stir in cocoa powder, maple syrup and vanilla essence
  • Once the peanut butter mixture is chilled, roll into balls and dip into chocolate mixture (We dipped ours twice to give a thicker coating)

Store in the fridge to ensure chocolate coating doesn't melt and truffles stay nice and firm
