Healthy Breakfast - Delicious Summer Bircher

Such a great recipe that gives you more time in the morning as you prepare the night before and refrigerate overnight. Contains a good amount of healthy fats, protein and complex carbs which makes for a great healthy breakfast and will keep you going throughout the day. 

I added Vanilla Berry protein to mine just to add a bit more protein!

Ingredients for 2 serves:

  • 1⁄2 C rolled oats
  • 1 Tbsp of chia seeds
  • 2 Tbsp of buckwheat
  • 1 Tbsp of course shredded coconut
  • 1 Tbsp of dried cranberries
  • 1 grated apple
  • 1 tsp. of cinnamon
  • 1 tsp. of pumpkin seeds
  • 1 Cup of water
  • 300ml yoghurt
  • 100g of frozen blueberries
  • 100g strawberries
  • 3 tsp. of chopped nuts

Can add vanilla, vanilla berry or unflavoured whey if you want a protein boost. 


  1. Mix top eight ingredients in a bowl and refrigerate overnight

  2. Mix bircher and yoghurt together and place in glasses/ jars. Top with blueberries, sliced strawberries and nuts.
